Chicken & Chickpea Curry

This is one of my winter favorite recipies, it is quick and easy to make and full of goodness.

it is also really easy to make your own by adding some variations such as adding baby spinach leaves, cherry tomatoes or cubed sweet potato.


Chicken breast/thigh diced (approx 800gms)
3 cloves garlic crushes
One small brown onion chopped
1 tablespoon curry powder
1 tsp chilli powder
1 tsp cumin/coriander mix
Salt and cepper
1 tsp tumeric
400g chickpeas drained and rinsed
400g Crushed tomato
Squeeze lemon juice (optional)
1/2 Teaspoon cinnamon
1 Cup water
1 Cup mixed veggies (whatever you want to add)


Cook onion in a little bit of butter or oil until soft
Cook chicken until brown
Stir in spices and garlic until fragrant
Add chickpeas, veggies, tomato and water, stir thoroughly
Bring to the boil,  then reduce heat and simmer covered for 10 mins.

Serve with steamed rice and pappadums
