Easy Beef and Veggie Stir Fry

Ingredients

1-2 tbs Coconut oil or ghee
350g grass fed beef thinly sliced
1-2 cups chopped broccoli
1 carrot chopped small
1 bunch asparagus chopped
1 -2 cup green beans chopped
2 tsp ginger chopped
2 garlic gloves chopped/crushed
3-4 spring onions chopped (or half brown onion chopped).

Sauce

1.5 Tbs soy sauce
2 Tbs oyster sauce
1 tsp Sirarcha sauce (if like it hot)
1/2 tsp chilli (for extra hot)
Some water (1/3 cup)

Serve with

Vermicelli noodles (add into stir fry after into sauce and leave to soak it up.
Or could serve with cooked rice instead

Method

Warm some coconut oil (1-2 tbs) in wok
Add ginger, garlic, onion and stir for 1 minute
Add beans, carrot and brocolli and stir fry for 1-2 mins
Add beef and asparagus and cook for further 1-2 mins until beef browned
Once beef cooked, add sauce ingredients and let simmer for 5-10mins. Add more water as needed.

Optional

Serve with a sprinkle of fresh coriander and sesame seeds
